Purple sweet potato mash

Serves 6-8 people

2-3 lbs Large Sweet potato, peeled and cut into smaller pieces

1/2 cup Whole Milk

4 Tbls Unsalted butter

Salt to taste - This is due to the sweetness of the potato and how much it has boiled in water.

In a large pot, add enough water to cover the potato pieces. Boil until soft, about 30 minutes. You don’t want the potato to overcook and become waterlogged, as this will make the mash watery in flavor.

Once the potatoes are cooked and soft, drain the water and allow them to steam. Once this is done, mix them in a mixing bowl or directly in the pot using a hand blender for 1-2 minutes to remove more steam and mash them.

Heat the milk and butter in a small pot. Add them to the mashed potato and mix until the liquid is incorporated.

Season with salt.
