Salted Caramel
It makes about 30, depending on how you cut them.
50 gram Butter
270 gram of Coconut sugar or Granulated sugar
300 gram Heavy Cream ( might be able to use coconut milk?? )
210 gram Swedish Dark Sirap - you could use molasses or maybe even maple syrup here. You can find Swedish sirap on Amazon ( no, I don’t get paid for that)
1 tsp White Vinegar (distilled)
1 Pinch salt
Also, need a bit of sea salt or whatever you want to season your caramel with
Put all ingredients in a thick bottom pot, medium size. You could use a cast iron skillet from Skeppshult in Freja’s Kitchen.
Melt the ingredients together and bring them to a gentle boil. Slowly boil for 25-30 minutes, or if you have a thermometer, bring it to 125C or 257F ( or drop some caramel into cold water; if you like the consistency, then it’s ready)
Line a form with parchment paper; once the caramel is cooked, pour it into the form and add the topping, like the sea salt sprinkled all over the caramel. Allow to cool down at room temperature, not the refrigerator. Once cooled down, yes, I know It's hard to wait; cut into cubes and wrap in paper!
