Bread spices are something you buy pre-packaged in Sweden, in the grocery store, never seen it in the US, so I made my research and made my own, very easily! You can find the recipe for the bread spices here; https://chefjohansvensson.squarespace.com/config/pages

This bread is very easy to make and does not require a lot of prep or time to proof. Mix, roll, and bake in the pan on the stove. It is also great to freeze and heat back up

Makes about 12-14 ea 110-120 gram per bread.

1/2 liter Kefir, full fat

11/2 dl swedish sirap or 215 gram

2 tsp salt

2 tsp baking soda

2 tsp bread spices

375-gram rye flour

375-gram all-purpose flour

In your stand mixer, add the kefir, sirap, salt, and bread spices. Mix both the flours and the baking powder in a separate bowl, so you disperse the baking powder evenly. Mix only enough for the dough to get together, it should look scraggy. Portion the dough out, 110-120 grams, and carefully roll them together into a ball and roll it out to 1/4” or about 5 mm thick, about 6” in diameter. Poke them with a fork, or if you have the special rolling pin. In a medium frying pan on medium heat, add the cake one by one, baking them for about 2 minutes per side. They should have a light golden brown color.
