This is a quick and delicious gooey cake from Sweden 

Kladd Kaka

Makes one 9” round form cake about 10-12 pieces

200 g unsalted butter

2 cup sugar

2 large eggs

1/2 cup all-purpose flour

1 tsp vanilla sugar (can be bought online, or make your own using confectioners sugar and dried vanilla)

3 Tbls cacao powder

1 pinch salt

Turn on oven to 400f to preheat. Butter a 9” form, and add 1/4 cup granulated sugar, move it around until the form has sugar in the bottom and all around the edges, this will create a “crust” on the cake and is easier to remove.

In a medium-size pot, add butter and melt on low heat. Once melted remove from heat and add the rest of the ingredients, and stir together, until smooth. Pour the batter into the form and bake in the oven for 15-20 minutes, until the edges of the cake have hardened. The middle of the cake should still be soft and gooey.

TIP: Chill down the cake completely in the refrigerator, cut the cake and reheat the pieces in the microwave and serve with whipped cream and berries.
